A Wassail without Equal

Ingredients
  

  • 2 quarts (2 liters) apple cider
  • 1 pint (½ liter) orange juice
  • 1 pint (½ liter) pineapple juice
  • 4 cinnamon sticks
  • 30 cloves
  • 3 tablespoons (37.5 grams) brown sugar or to taste

Instructions
 

  • Combine the apple cider, orange juice and pineapple juice in a deep saucepan or a crockpot.
  • Add spices and brown sugar, stirring well to incorporate.
  • Cover and allow to simmer on low for at least 4 hours. Try not to let it boil as this will burn the sugars. Generally, the longer this sits, the sweeter and more spiced it will get, so it’s often better to make it the day before.
  • Once the drink has reduced and the spice is at the desired level, serve. To make it a little more festive, you can add brandy, whiskey or rum and/or garnish it with apple or citrus rings.

Notes

Wassail is an incredibly forgiving drink so you can also alter the flavor by experimenting with all different kinds of fruit juices (pomegranate, mango, etc.). However, be sure to use apple cider and not apple juice as the base because the water content with apple juice is very different.
